Sweet Summer Crepes

Yesterday we had my mom and step-dad over for dinner to celebrate my step-dad’s birthday.  We decided instead of having a traditional birthday cake for dessert we would have a crepe dessert bar.  

Here is the recipe (from my friend Kristin’s kitchen):

2 beaten eggs

1 1/2 cups milk

1 cup all-purpose flour

1 tablespoon oil

2 tablespoons sugar

My mom had a very old crepe maker that worked perfectly, but you could also use a very hot pan on the stove. For toppings, we had nutella (this is a must, in my book), bananas, strawberries, dark chocolate chips, whipped topping, and powdered sugar. We doubled the recipe, but really didn’t need to for four people. We now have a bunch of crepes in the freezer and will be using them for breakfasts throughout the week.
